I thought I couldn’t make almond flour because I don’t have a grinder. Whenever I put almonds into the blender or food processor, it becomes almond butter. Apparently though, there is a window of time, when it becomes almond flour first. That’s how I got the flour for these yummy, flourless muffins!
TRIPLE ALMOND POPPYSEED MUFFINS3 egg yolks1/3 cup honey1 tsp almond extract1/2 tsp baking soda1/2 tsp saltMix all ingredients together to well blended, then slowly fold in1 1/4 cup almond flour (made grinding raw blanched almonds in a blender)3 egg whites, beaten till frothy, then folded into batter1-2 TBL Poppyseeds

I have never tried almond flour but I have a big bag from sam’s club. I will have to give these a try. Thanks for sharing!!

With Brian being allergic to nuts (not peanuts) we stay away from many of your latest suggestions. I’m nervous to even let Kyler try any form of nut, besides peanuts. Bummer.

Wow, looks like it tastes so yummy! I wanna try it out soon at home. Hopefully such healthy and yummy snacks are available in vending machines for people like me who are always on the go.
