gluten free muffins I thought I couldn’t make almond flour because I don’t have a grinder. Whenever I put almonds into the blender or food processor, it becomes almond butter.  Apparently though, there is a window of time, when it becomes almond flour first.  That’s how I got the flour for these yummy, flourless muffins!

 

TRIPLE ALMOND POPPYSEED MUFFINS3 egg yolks1/3 cup honey1 tsp almond extract1/2 tsp baking soda1/2 tsp saltMix all ingredients together to well blended, then slowly fold in

1 1/4 cup almond flour (made grinding raw blanched almonds in a blender)3 egg whites, beaten till frothy, then folded into batter1-2 TBL PoppyseedsDSC_0473

Pour batter into 6 regular sized muffin cups.  Sprinkle slivered almonds and brown sugar on top.  Bake at 350 for about 20 minutes, or until knife comes out clean.  This recipe is gluten free, but seriously, you wouldn’t even know it!

The almond flour- I blended only a small handful at a time… very small.

DSC_0472 With my kids in school, I’ve got to start borrowing other people’s children to taste test my new healthy recipes.  My sister’s baby was the perfect test subject. (PS on my sister… if you are looking for Christmas presents already, she’s giving away a Nintendo DSi with 2 games right now)

I have never tried almond flour but I have a big bag from sam’s club. I will have to give these a try. Thanks for sharing!!

With Brian being allergic to nuts (not peanuts) we stay away from many of your latest suggestions. :( I’m nervous to even let Kyler try any form of nut, besides peanuts. Bummer.

Good call Holly! I should move on from the nuts anyway.. they are doing a number on my caloric intake for the day!

Wow, looks like it tastes so yummy! I wanna try it out soon at home. Hopefully such healthy and yummy snacks are available in vending machines for people like me who are always on the go.
